Easy 1 dish meal. I threw everything (except the lettuce) in a crock pot so it could cook on the low setting and be ready for dinner, but you could just as easily cook this in a skillet. I like how tender the meat is when it’s cooked in the crock pot for the day though.


  • 1 lb Shaved beef
  • 1/2 Sliced onion
  • 1 Sliced bell pepper
  • 6 Sliced mushrooms
  • Sea salt to taste
  • Pepper to taste
  • 3 tbsp Olive or avocado oil
  • lettuce for salad
  • Shredded cheese for topping


  1. Toss all the ingredients into a crock (except the lettuce….. because you probably would’t want to eat it when it all mushy!) and cook on low for 4 – 6 hours. (Or cook in a skillet until the meat is fully cooked and the vegetables are tender)
  2. Serve over lettuce.
  3. Top with shredded cheese
  4. Add a little bit of the juices for a “dressing” or try my bacon tomato dressing (found here)
