Who doesn’t like the smell of chili in the cold months? Use this as a chili base or just sip it for a delicious meal as is! Use for my 3 day bone broth fast or for the 21 day challenge for a bit of variety. 🙂

Ingredients:

  • 1 roaster style slow cooker
  • Beef roast with bone in OR 10 lb chicken leg quarters
  • 3 large white onions – Chopped coarsely
  • 4 green red peppers – cored and chopped coarsely
  • 4 – 15 oz cans of Rotel tomatoes – puree
  • 1 tbsp Garlic powder
  • 3 tbsp Cumin, ground
  • 3 tbsp Coriander, ground
  • 3 tbsp Onion Powder
  • 4 tbsp Chili powder
  • 3 tablespoons of Monk Fruit sweetener or Erythritol ( or other keto sweetener to taste)
  • 4 teaspoon of pink Sea Salt
  • 4 small cans tomato paste
  • 1/2 tbsp of ground black Pepper
  • 1/4 c Braggs apple cider vinegar

Instructions:

  1. In a large roasting style slow cooker add 1 1/2 gallons of water.
  2. stir in all the seasonings.
  3. Add the bone in beef or 10 lb bag of chicken leg quarters.
  4. Chop Onion and peppers in course chunks.
  5. Cook at 450 degrees until the meat is cooked, approx 4 – 6 hours.
  6. Remove the meat and separate from the bones.
  7. Remove the chunks of vegetables and puree them. Add them back into the broth once they are pureed.
  8. Add the bones, fat, skin, and cartilage back into the broth.
  9. Cook at 300 degrees overnight.
  10. Your broth should cook for 24 hours total.

OPTION:

Beef Chili:

  • Use the broth as a base and add in cooked ground beef, chopped fresh mushrooms, chopped fresh onion, chopped fresh green chilies, and chopped fresh tomatoes for a delicious chili.
  • Top with slices of avocado, sour cream, and shredded cheese.

Chicken Chili:

  • Using the bone broth as a base, add cooked chicken, chopped fresh mushrooms, chopped fresh onion, chopped fresh green chilies, and chopped fresh tomatoes.
  • Top with slices of avocado, sour cream, and shredded cheese.
