This is a great dairy free dessert.
- 2 c boiling water
- 2 tbsp unflavored gelatin
- 1/2 c frozen mixed berries
- 1 quart coconut creamer
- 4 tbsp powdered Erythritol
- Boil 2 cups of water
- Whisk 2 tbsp gelatin into boiling water until dissolved.
- In a mixer, mix together coconut creamer and powdered Erythritol.
- Pour water and gelatin mixture into the creamer and mix well.
- stir in berries
- refrigerate until gelled. Approx 3 hours.
- Serve cold.
