This is a great dairy free dessert. 

Ingredients:

  • 2 c boiling water
  • 2 tbsp unflavored gelatin
  • 1/2 c frozen mixed berries
  • 1 quart coconut creamer
  • 4 tbsp powdered Erythritol

Instructions:

  1. Boil 2 cups of water
  2. Whisk 2 tbsp gelatin into boiling water until dissolved.
  3. In a mixer, mix together coconut creamer and powdered Erythritol.
  4. Pour water and gelatin mixture into the creamer and mix well.
  5. stir in berries
  6. refrigerate until gelled. Approx 3 hours.
  7. Serve cold.
